The presence of the <em>Lessini Mountains<\/em>, <em>Lake Garda <\/em>and the <em>Valpolicella<\/em> hills, together with the different cultural influences transmitted by the dominations of the past and by the neighbouring provinces, contributed to the creation of a gastronomic panorama rather varied and peculiar.<\/p>\n\n\n\n<p>The typical dishes of Vicenza, such as <em><span style=\"text-decoration: underline;\">baccal\u00e0<\/span><\/em> (salt cod) <em><span style=\"text-decoration: underline;\">alla vicentina<\/span><\/em> and <em><span style=\"text-decoration: underline;\">soppressa all\u2019aglio<\/span><\/em> (garlic sausage) or Padua (<span style=\"text-decoration: underline;\">pastissada de caval<\/span> and other horsemeat dishes) are also present in the <em>veronese<\/em> culinary tradition. Some typical dishes of Mantua and Ferrara can be tasted in areas on the border of the province of Verona in their local variations, such as <span style=\"text-decoration: underline;\">risotto al tastasal<\/span> (salami paste that in the Veronese tradition was tasted before stuffing to check its salting), which is a variant of Mantuan risotto, <span style=\"text-decoration: underline;\">pumpkin ravioli<\/span> or <span style=\"text-decoration: underline;\">mustard<\/span>).<\/p>\n\n\n\n<p>Gastronomic traditions linked to the <strong>Lessini Mountains <\/strong>are based on <span style=\"text-decoration: underline;\">cow dairy products<\/span>. From here come the <strong>Monte Veronese<\/strong> cheese and the <strong>raw milk butter produced in the <em>malga<\/em> (mountain pasture)<\/strong>, which together with the <strong>smoked ricotta<\/strong> represent the ingredients of various recipes such as the <strong>gnocchi <\/strong>(<em>dumplings<\/em>)<strong> di malga <\/strong>or<strong> ghochetti sbatui<\/strong>, not to be missed if you come to these mountains.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large\"><img loading=\"lazy\" width=\"550\" height=\"413\" src=\"https:\/\/www.ilbabbuinoghiotto.com\/wp-content\/uploads\/2020\/04\/Cucina-tipica-veronese-gnocchi-di-malga.jpg\" alt=\"\" class=\"wp-image-1121\" srcset=\"https:\/\/www.ilbabbuinoghiotto.com\/wp-content\/uploads\/2020\/04\/Cucina-tipica-veronese-gnocchi-di-malga.jpg 550w, https:\/\/www.ilbabbuinoghiotto.com\/wp-content\/uploads\/2020\/04\/Cucina-tipica-veronese-gnocchi-di-malga-300x225.jpg 300w, https:\/\/www.ilbabbuinoghiotto.com\/wp-content\/uploads\/2020\/04\/Cucina-tipica-veronese-gnocchi-di-malga-320x240.jpg 320w\" sizes=\"(max-width: 550px) 100vw, 550px\" \/><\/figure><\/div>\n\n\n\n<p>In the Lake Garda area the climate is more temperate: there vineyards and olive groves, which were linked to the cult of San Zeno, have been cultivated since the Middle Ages. In addition to wines, it is essential to taste <strong>Garda extra-virgin olive oil<\/strong>, different from the one produced in other areas of Verona. The gastronomic tradition of the lake also employs native <span style=\"text-decoration: underline;\">freshwater fish<\/span>, including <strong>trout<\/strong>, <strong>pike<\/strong>, <strong>waterfish<\/strong> and <strong>tench<\/strong>, which is delicious both grilled and in the risotto.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large\"><img loading=\"lazy\" width=\"550\" height=\"366\" src=\"https:\/\/www.ilbabbuinoghiotto.com\/wp-content\/uploads\/2020\/04\/Cucina-tipica-veronese-luccio-con-polenta.jpg\" alt=\"\" class=\"wp-image-1120\" srcset=\"https:\/\/www.ilbabbuinoghiotto.com\/wp-content\/uploads\/2020\/04\/Cucina-tipica-veronese-luccio-con-polenta.jpg 550w, https:\/\/www.ilbabbuinoghiotto.com\/wp-content\/uploads\/2020\/04\/Cucina-tipica-veronese-luccio-con-polenta-300x200.jpg 300w, https:\/\/www.ilbabbuinoghiotto.com\/wp-content\/uploads\/2020\/04\/Cucina-tipica-veronese-luccio-con-polenta-320x213.jpg 320w\" sizes=\"(max-width: 550px) 100vw, 550px\" \/><\/figure><\/div>\n\n\n\n<p>The river Po plain area, which runs from Zevio to the east area to continue south to Rovigo and west to Mantua, is completely suited to agriculture and livestock farming. The cuts of meat that cannot be missed are <span style=\"text-decoration: underline;\">beef or veal, hen, calf\u2019s head, <em>cotechino<\/em> and pork tongue (regular or corned)<\/span>. To accompany them, various sauces are served (green sauce, horseradish sauce or other variants) among which the delicious <em>pear\u00e0<\/em> can never miss. This dish is very popular and is celebrated along with the mask of the <em>&#8220;Pap\u00e0 del gnoco&#8221;<\/em> star of the &#8220;Bacanal del Gnoco&#8221;.<\/p>\n\n\n\n<p>Finally, the Veronese desserts have very simple flavours and recall ancient traditions. At Christmas, apart from the <strong>Pandoro<\/strong> (invented in Verona), you can also taste his forerunner, the <strong>Nadalin<\/strong>, a star-shaped cake, or the renowned <strong>Ofella<\/strong>.
